If you’re reading this, chances are we’re preaching to the choir and you know this already, but just in case, here’s a quick rundown of what makes Japanese wagyu the world’s most admired beef.
Wagyu is a breed of Japanese cattle, with the word literally meaning ‘Japanese cow’.
High-grade wagyu can cost anything up to $200 per pound, or up to $300 for a steak. In fact, according to Business Insider Magazine, Japan exported $227 million worth of Wagyu in 2020 alone.
The rearing of wagyu cattle in Japan is strictly regulated with each farmer following precise guidelines. This includes feeding all the animals a healthy diet rich in wheat and corn and providing them a long, leisurely lifestyle. The four breeds producing wagyu meat in Japan are the Japanese Black, Brown, Shorthorn and Polled Cattle, and these are all raised in different regions including Miyazaki, Kobe, Matsuzak, and Kagoshima.
While cattle from all regions produce great meat, it’s worth delving into the unique nature of Kagoshima Black Cattle – they are blessed with a sunny climate and natural surroundings of a warm tropical island, and comprise of about 90% of the wagyu cattle breeds. The Kagoshima Prefecture has the highest number of Japanese Black Cattle in the country, and these cattle are marketed under the brand name ‘Kagoshima (Black) Beef’. The principal characteristics of the meat are its tenderness and full-bodied flavour, together with well-balanced fat marbling throughout the muscle fibres.

The four main breads of wagyu cow were traditionally bred for physical endurance and agricultural work, and this resulted in them developing unique intramuscular fat cells.
It’s this high fat content that makes the meat taste so wonderfully tender and gives it that light pink marbling effect.
Wagyu is graded according to its Beef Marble Score (the density of muscle fat found between the 12th and 13th ribs) and also assigned a letter from A to C and a number from 1 to five for quality, with A5 being the highest available.
